When water is added, the nose becomes more floral, the palate loses its flavor, and the finish is completely wiped away. The mouthfeel is somewhere between thin and a medium viscosity and only coats the tongue and top of the palate. This isn’t an overly complex bourbon, with many of the flavors still developing. The palate is pleasant with notes of caramel, leather, apple, and pear, but once again the dough and yeast flavors shine through. Floral notes are also present with the most prevalent note on the nose being the dough. The nose has notes of corn, dough, and fresh light fruits such as apple and pear however, these fruit notes are not quite mature yet. Cherry cola works into the mid palate, with a tiny bit of black tea tannin on the back. Palate: Nutmeg on the approach, followed by straight sweet shop: milk chocolate and candied walnuts, caramel sauce. Nose: The nose is sweet cedar and brown sugar mingled with dark cherry and pipe tobacco.
